This YUMMY ice cream tastes just like soft serve, but it is so healthy, you could eat it for breakfast. It is made with bananas (which are a good source of potassium, vitamin B, vitamin C, and fiber) and flavored “Princess Rain style” with natural honey and creamy peanut butter (rich in protein and vitamin E). Even the chocolate chips mixed in at the end contain antioxidants (which help protect the body from free radicals). As an added bonus, this healthy ice cream is EASY to make -NO ice cream maker needed!
For a twist, we also sandwiched this luscious soft serve between cookies (OK, maybe that isn’t quite as healthy, but we are sure you will agree that it is delicious)!
We encourage you to put your own spin on this ice cream by adding any mix-in’s you like (candies, nuts, coconut, and dried fruit are all some ideas). Also, try using your favorite cookies or even graham crackers to make the sandwiches. Be creative and have fun!
Ingredients:
4 ripe bananas
1-2 Tablespoons Honey
2 Tablespoons peanut butter
¼ cup mini chocolate chips or any other yummy mix-in’s you can think of (optional)
A Splash (1 or 2 Tbs.) half and half, milk, or milk alternative (soy, almond, coconut) (optional)
Directions:
- Wash your hands.
- With adult supervision, slice banana with a butter knife. Place in a baggy and freeze.
- Dump frozen bananas into a food processor or powerful blender. Add peanut butter and honey and blend, scraping sides often, until mixture resembles soft ice cream (don’t be surprised if the adult helping you has to hold down the processor at first). If you find that the mixture is too thick for your taste, you can add a splash of milk or half and half.
4. Scrape into a quart container, stir in mix-in’s, and freeze for about an hour.
5. Scoop and serve. Yum!!!
To make ice cream sandwiches, scoop ice cream in between chocolate chip cookies (being careful to not squeeze cookies together too tightly). Refreeze for an hour. Clean up edges with a butter knife and then roll sides in sprinkles, chocolate chips, nuts or anything else you can think of. Enjoy!
